Not to offend, as Rob's description and pictures were awesome, but there are two items that I would add -

1. Prior to removing the plug, shoot the hole with some compressed air to clear out anything that might have gotten in there and that you want to keep out of the cylinder.
2. A length of rubber hose that is tight enough to grip the insulator is handy to get the plugs started. They are plenty flexible and will usually slip if you start to cross-thread the plug, avoiding damage to the threads in the block.

Am I stupid, or do I count 16 spark plugs?

Yea theres 2 per cylinder. 2x8= 16

When I look under the hood, I only counted 8.

Why are there 16? What purpose does that serve?

to be emissions friendly - one plug fires at power stroke (of course), the other during exhaust stroke to burn anything "left over"

the HEMI was never the most emissions friendly motor - it was designed for power!

Better late than never. I didn't realize that it was the reason behind so many plugs. Makes sense, kinda.
